VEGAN SWEDISH MEATBALLS


These fitter Vegan Swedish Meatballs are created with creamy white beans, meaty mushrooms and polyunsaturated fats. they retain a feel, add the walnuts and mushrooms in the end, then I love to combine the beans up till they smooth.

Ingredients

  • 1 tbsp oil (olive, olive, rapeseed or coconut)
  • 400 gram (14oz) tin of white beans, drained and rinsed (cannellini, haricot or legumes )
  • 50 gram (1/2 cup) walnuts
  • 530 tsp (2 1/4 cups) unsweetened almond milk (or sub unsweetened cashew or oat milk)
  • 2 tbsp cornflour (cornstarch)
  • 1/2 tsp (Dijon) mustard

2 tbsp tamari (or soy sauce or even fermented )

Fresh parsley chopped

To function:

Mashed potatoes
Cranberry sauce

Directions

  1. Heat the oil and add garlic and the onion sexy
  2. Fry until softened for about 10 minutes
  3. Meanwhile, place the white beans in a food processor or blender (or handheld stick blender) and whizz until completely smooth
  4. Add the garlic and onion, along with the walnuts, mushrooms and salt pepper
  5. Blend very temporarily the walnuts and mushrooms have been cut into bits that are smaller, but still maintain a texture
  6. Lay a few baking paper onto a dish that was large out
