CHUNKY MONKEY MUFFINS (VEGAN AND REFINED SUGAR-FREE)

In the end of summertime 2017 a few vegan Ben & Jerry's ice cream flavours popped up at the shops in Austria (I am aware. . We're consistently a bit behind). My boyfriend and I needed to try PB: Chunky Monkey, Chocolate Fudge, and all of the flavors at once & Cookies.


Chunky Monkey was not actually our favourite (PB & Cookies for your win!) However, the combo of chocolate chunks, peanut butter, bananas and walnuts and I adhered together. And I have been appreciating to integrate these tastes!

Servings : 6

Ingredients
  1. 1 tbsp maple syrup
  2. 1/2 cup fermented milk (I used unsweetened rice )
  3. 1/4 tsp apple cider vinegar
  4. 1 tbsp coconut oil - squeezed
  5. 1 tsp baking powder
  6. 1/4 tsp baking soda
  7. 1/3 cup chocolate balls (save a couple to put in on top before baking)
  8. 1/4 cup almonds - chopped (save a couple to put in on top before baking)
  9. Butter - chilled

Directions
  1. Preheat the oven 180.
  2. Add milk that is plant-based the maple syrup, apple cider vinegar and oil. Whisk to blend.
  3. Stir to blend.
  4. Add in roughly 3/4 of peanut butter, and those chocolate balls, walnuts. Stir to blend.
  5. The batter needs to be sufficient for 6 muffins. Split the remainder of peanut butter, walnuts and the chocolate .
  6. Bake for 20-25 minutes. It is possible to use small pole or a toothpick to assess whether the cakes are baked all the way through. Let them cool off a little !
