INGREDIENTS

  1. 2 tbsp olive oil
  2. 2 tsp garlic powder
  3. 1 tsp curry powder
  4. 1 tsp ground cumin
  5. Salt and pepper to taste

KALE AND BRUSSELS

  1. 1--2 tbsp olive oil
  2. 1 tbsp minced garlic
  3. 4 cups kale

FOR THE QUINOA

  1. 1 cup quinoa, raw
  2. 2 cups vegetable broth or water

INSTRUCTIONS

  1. Preheat your oven and spray on a baking sheet with cooking spray or rub with oil.
  2. Put vegetables and drizzle with olive oil. Sprinkle on spices. Massage the spices.
  3. Bake for 25-30 minutes at 400ºF.

QUINOA

  1. Prepare your quinoa Though your veggies are cooking.
  2. Bring water and quinoa . Cover and turn heat to low and let simmer, covered, for approximately 15-20 minutes or till all of the water has evaporated.
  3. Kale and Brussels
  4. Add garlic If oil is fragrant.
  5. Add kale and Brussels and simmer for 5-7 minutes. Season with pepper and salt and remove from heat.
  6. Separate out sweet potatoes, quinoa, and carrot mix equally into meal prep containers or six meals.
  7. Top with tahini (or some other salad dressing or hummus of your pick ) and sesame seeds and love!
