Ingredients
1 heaping cup almond milk (we urge Wellbee's brand*)
1/2 cup vegan dark chocolate (chopped chips or bar ), DIVIDED
1/4 cup almonds (optional)
1/3 cup coconut oil

Directions
- Add chopped dates and use a whisk to blend / split dates up to the mix. Put aside.
- In another bowl, then beat aquafaba (with a handheld mixer or whisking vigorously) until soft and light and loose peaks have formed. (To view aquafaba whipped, check this out Guide to Aquafaba Video.)
- To the aquafaba, add vanilla and the coconut oil and beat or whisk to blend. Melt the remaining portion of those chocolate chips in the microwave or over a double boiler and increase the aquafaba. Fold/stir to unite (see picture ).
- You ought to have a dough that is semi-tacky. Cover and chill for half an hour in the fridge.
- Scoop out about 1 1/2-Tablespoon quantities of bread (I enjoy this spade ) and place on baking sheet with roughly a 1-inch gap between every cookie to permit for spreading. Gently press down with palm of hands to form modest disks (see picture ).
