FUDGY VEGAN BROWNIE COOKIES

Ingredients


1 heaping cup almond milk (we urge Wellbee's brand*)

1/2 cup vegan dark chocolate (chopped chips or bar ), DIVIDED

1/4 cup almonds (optional)

1/3 cup coconut oil

3 Tbsp coconut oil

Directions


  1. Add chopped dates and use a whisk to blend / split dates up to the mix. Put aside.
  2. In another bowl, then beat aquafaba (with a handheld mixer or whisking vigorously) until soft and light and loose peaks have formed. (To view aquafaba whipped, check this out Guide to Aquafaba Video.)
  3. To the aquafaba, add vanilla and the coconut oil and beat or whisk to blend. Melt the remaining portion of those chocolate chips in the microwave or over a double boiler and increase the aquafaba. Fold/stir to unite (see picture ).
  4. You ought to have a dough that is semi-tacky. Cover and chill for half an hour in the fridge.
  5. Scoop out about 1 1/2-Tablespoon quantities of bread (I enjoy this spade ) and place on baking sheet with roughly a 1-inch gap between every cookie to permit for spreading. Gently press down with palm of hands to form modest disks (see picture ).
