ULTIMATE VEGAN QUESADILLAS


Meet the supreme vegan quesadilla: produced with plant based ingredients, packed full of"cheesy" taste without using imitation cheese, and guaranteed to make you want seconds!



I know man did I love these and I did. It does not mean that I can not make my own recipe, although I really don't eat them !

Ultimate meatless vegan quesadillas with whole wheat tortillas veggies, and a noodle homemade filling.

PREP TIME
15 minutes

COOK TIME
30 minutes

TOTAL TIME
45 minutes

INGREDIENTS

  1. For serving, avocado
  2. For serving salsa
  3. 8 ounces sauce
  4. 15 ounce can of chickpeas
  5. Juice of 1 lime
  6. 1 tsp salt
  7. 1 tsp cumin
  8. 1 tsp chili powder
  9. 8 cloves of garlic
  10. Mushrooms
  11. 1 tbsp olive oil

To some top speed blender or food processor, add cashews enchilada sauce elements, salsa, drained chickpeas, lime juice, salt, cumin, and chili powder

Pulse/blend until smooth

Add garlic, onion, bell pepper, and olive oil and simmer over moderate heat for 10 - 15 minutes, until mushrooms cook

Heat a large skillet over medium to medium high heat and oil

By dispersing the filling mixture in an even layer assemble quesadillas

Add vegetables and fold over tortilla in half

Repeat steps for staying 7 tortillas

Cook 1 - two quesadillas at a time determined by how big your skillet

Cook for 2 - 4 minutes each side, until crispy

Oil pan before adding Every Time to quesadillas

Serve with avocado and salsa

NOTES

This may serve 4 - 6 people as a main dish. So this recipe will create 24 quesadilla bits we cut each quesadilla into 3 bits
