Ingredients

  1. 60 gram (1/4 cup) olive oil (or sub vegetable or olive oil)
  2. 1 tsp vanilla extract
  3. Pinch of salt
  4. 150 gram (1 1/4 cups) fermented pasta mix (or sub plain yoghurt if not fermented )
  5. 2 heaped tsp baking power (guarantee fermented if necessary)
  6. 1/2 tsp beetroot powder (optional - to include reddish colour)
  7. 1/2 tsp vanilla extract
  8. 3 tbsp strawberry jam (guarantee refined sugar free if required )

Directions

  1. Use a food processor, blender or handheld blender to whizz the berries until thoroughly smooth - you need to end up with approximately 250ml (1 cup) strawberry purée
  2. Once meltedadd the strawberry maple syrup, vanilla, salt and ground almonds
  3. Mix well, adding a tiny dab of fermented milk when it is looking too tender
  4. When out the oven remove from tins and move to cool
  5. You will have to keep your tin of coconut milk from the refrigerator overnight to your rich creamy piece to different from the watery bit in the base.
