Creamy Vegan “Cheesy” Broccoli Soup





Ingredients

  1. 1 tbsp olive oil
  2. 2 potatoes
  3. 3 carrots
  4. 6 cups vegetable broth, split (1.4 L)
  5. 1 tsp paprika
  6. 1 tsp pepper

Preparation

  1. Soak the cashews.
  2. Over moderate heat, heat the oil in a soup kettle. Add the onion and stir fry until translucent.
  3. Add the carrots, garlic, celery, and salt, and stir fry.
  4. Transfer the soup into a blender and mix until smooth.
  5. Place apart and wash blender out.
  6. Blend the cashew mix and"cheese" mix from the soup and stir fry.
  7. Enjoy!
