Creamy Vegan “Cheesy” Broccoli Soup
Ingredients
- 1 tbsp olive oil
- 2 potatoes
- 3 carrots
- 6 cups vegetable broth, split (1.4 L)
- 1 tsp paprika
- 1 tsp pepper
Preparation
- Soak the cashews.
- Over moderate heat, heat the oil in a soup kettle. Add the onion and stir fry until translucent.
- Add the carrots, garlic, celery, and salt, and stir fry.
- Transfer the soup into a blender and mix until smooth.
- Place apart and wash blender out.
- Blend the cashew mix and"cheese" mix from the soup and stir fry.
- Enjoy!
