5-MINUTE MEDITERRANEAN BOWL – HEALTHY LUNCH MEAL PREP RECIPE

This healthful vegan bowl has some salad out there, a few hummus in there, a few chickpeas, some paleo & vegan tzatziki and some quinoa, which most of us agree is quite Mediterranean, okay?
Complete Time: 5 minutes

Ingredients

  1. Salad
  2. 1 small lemon, cubed
  3. Little bunch of parsley, chopped
  4. 1-2 spring onions, thinly sliced
  5. For Your bowl
  6. 2 tbsp hummus
  7. 1 tablespoon tzatziki
  8. 2-3 tablespoon quinoa, cooked
  9. black pepper, freshly ground

Directions

  1. Salad: Wash the vegetables, chop them, put into a mixing bowl. Add olive oil, vinegar, and salt to taste.
  2. Construct your bowl: Salad, rinsed and drained chickpeas, the olives, quinoa. From the middle/on shirt: one tablespoon tzatziki and 2 tablespoons hummus ground black pepper. Ready.

Notes

  1. Rather than tzatziki, here I used this recipe.
  2. This similar salad would also go nicely in this bowl (not vegan).
  3. Meal Prep alternative: Keep all sections of the Mediterranean Bowl in separate containers in the refrigerator and assemble just before serving. Rather than the salad you utilize tomatoes that are entire and can a lemon.
