MUSHROOM SPINACH TOFU WRAP


Fantastic for lunch or a filling breakfast! No eggs delicious and all vegan! It is the /anything lunch!

I wish to keep things easy -- nothing I need to cook myself. I had a block of leftover mushrooms, tofu, a couple of cherry tomatoes and cilantro hummus tops. Perfect!

Ingredients


  1. Ingredients to your cilantro hummus *
  2. 14 ounce chickpeas - drained and rinsed
  3. 1 tbsp tahini
  4. 3/4 tsp salt
  5. 1 tsp olive oil
  6. Juice of half a lemon
  7. 1 tbsp water more to lean out

Ingredients for your Mushroom Spinach Tofu Wrap

  1. 1/4 cup frozen lettuce
  2. 1/4 tsp turmeric powder
  3. 1/4 tsp curry powder
  4. 1 tsp canola oil
  5. A couple of tomatoes - quartered

Directions


  1. Directions for your cilantro hummus
  2. Put in your food processor or blender.
  3. Directions for your Mushroom Spinach Tofu Wrap
  4. Heat the canola oil in pan and scramble the tofu or use a fork before adding it into the 27, to take action.
  5. Mix well, or so the tofu gets an shade.
  6. Add spinach and the chopped cremini mushrooms.
  7. Keep it while stirring for about 10 minutes until the mushrooms have dropped most of spinach and the water is not frozen. You may add kala namak spices, or sweeteners to taste and taste.
  8. Heat the tortilla at a bowl. Spread tablespoons of the cilantro hummus onto the tortilla, top with all the lettuce, lettuce, and spinach. Add cherry tomatoes as you would do to get a wrap and fold it! And enjoy!

Notes

  1. You won't want of the hummus. Enjoy the remainder using crackers or on bread!
