Easy Gluten Free Vegan Pumpkin Coffee Cake Recipe (Dairy-Free, V, GF, Refined Sugar-Free)

Yes, 1 petit four. <-- Okay, today I can see how using a number from the food thing I'm using for instance in a sentence with a number in it's perplexing. I did not create the rules!

INGREDIENTS

Streusel


  • 3 1/2 tbsp gluten oat flour
  • 3 1/2 tsp oil, melted
  • 1/4 cup coconut oil
  • 1/4 cup + 2 tbsp coconut sugar
  • 1/4 cup + 2 tbsp pure maple syrup
  • 1 carrot egg (1 tbsp ground flax + 3 tbsp water, dip together, place for 15 mins)
  • 1 tsp pure vanilla extract


Free oat flour - make certain it's quite ground if using homemade. Oat flour will end in cake.

  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon*
  • 1/2 tsp ground cloves*
  • 1/4 tsp salt

INSTRUCTIONS
  1. Preheat the oven. Line an 8-inch or 9-inch square baking pan with greased foil or parchment paper. Put aside.
  2. Make the streusel: Insert ingredients that are Streusel . With a fork, stir and fold until well integrated. Put aside.
  3. Create the curry Insert all of the Wet Ingredients into a bowl that is huge: carrot egg, coconut oil, maple syrup, pumpkin, coconut oil and vanilla. Whisk until integrated.
  4. Add the dry ingredients: salt, almond meal, baking soda, baking powder, spices and oat flour. Whisk together ensuring no flour patches stay. Batter will be very thick--don't include liquids or water.
  5. With a rubber spatula, spread in an even coating. Sprinkle streusel over skillet.
  6. Test for doneness by sticking a toothpick. The toothpick will come out clean once the cake is finished.
  7. Allow to cool in pan put on a rack for approximately thirty minutes. Lift from pan and move directly to cool completely, about 1-3 hours. Slice and Revel in!

NOTES

  1. You can substitute each one these spices with two tsp pumpkin pie spice.
  2. Topping will harden When stored in the fridge. If wanted Let me soften prior to enjoying.
  3. This java cake works well. Slice very first keep in an airtight container in the freezer for up to 1 month. Allow to thaw.
