SPINACH & TOMATO HUMMUS TART | VEGAN RECIPE


I have heard it said before that life is too brief to produce your own puff pastry and that I concur. This tomato and spinach hummus tart may be summed up in 25 minutes; insert puff pastry and it is no longer a alternative that was fast!

Ingredients

  1. Sheet puff pastry
  2. 200g hummus
  3. 3 spring onions
  4. 2-3 big vine tomatoes
  5. Handful lettuce leaves
  6. 3 tablespoons chickpeas (tinned or cooked and chilled ) soaked for a Couple of Minutes in 1 tablespoon balsamic vinegar
  7. 2 tablespoons vegan pesto
  8. Strategy
  9. Preheat oven mark 4 or 4 according to the pastry directions.
  10. Use a knife leaving a border.
  11. Spread the hummus within the edge within the pastry.
  12. Set spinach, tomato slices, the spring onions and chickpeas evenly.
  13. Drizzle the pesto on the top (see notes), insert the mozzarella, season with the salt and pepper, and then put in the oven. Bake for 15 minutes or until the pastry is golden brown and under.
  14. Cut into pieces and serve.


Notes

  1. You may roll it, if utilizing pastry that's wrapped in greaseproof paper.
  2. Mix with a little olive oil if the pesto is too thick.
