Ingredients
- 1 lb cooked berry (small to moderate sized head)
- 250 g mushrooms
- 1 tablespoon nutritional yeast flakes
- 1 teaspoon onion powder
- 1/4 tsp pepper
- Pinch of paprika that is smoked
- 8 ounces pasta of choice (e.g. fermented pasta)
Directions
- Cut the cauliflower into florets and cook it until fork tender.
- In another kettle cook pasta of choice according to the directions on the package.
- The garlic minces while the pasta and cauliflower cooks.
- Heat 1 teaspoon of oil in a skillet and then add garlic. Fry over moderate heat for approximately 2-3 minutes or till lightly browned.
- Add the garlic, the emptied cauliflower, and the rest of the ingredients (except the pasta, the mushrooms, along with the new herbs) into a high heeled blender and blend on high speed for approximately 1-2 minutes until creamy and smooth. Try out the sauce and adjust seasonings.
- Sauté for approximately 3-5 minutes over moderate heat, add a pinch of pepper and salt.
- Pour on the Alfredo sauce over the pasta, add the mushrooms, garnish with fresh veggies (e.g. parsley) and love! Store leftovers in the refrigerator.
