Vegan Lotus Biscoff cheesecake recipe


I am quite pleased to share this recipe with you guys, it is cheesecake perfection!
This vegan Biscoff cheesecake is super fast & simple to create and comprises just a few'easy to find' ingredients. I used cashew nuts and lotion that give the creamy filling with this cheesecake to make it milder.



When you have not heard of Biscoff biscuits before, they are a buttery, caramel cookie cutter that are accidentally vegetarian! They taste just like digestive biscuits. . .they're tasty and irresistible

Ingredients to your foundation

-160gram of Lotus Biscoff biscuits
-60gram of dairy-free butter (melted)
-2 tbsp of coconut oil (melted)
-180gram of cashew nuts (soaked nuts & overnight )
-3 tbsp of Lotus Biscoff disperse
-1 tsp of vanilla bean paste
-2 tbsp of coconut oil (melted)
TIP- The cashew nuts will need to be soaked overnight in water. Just be certain the nuts are being covered by that the water!

To Generate the foundation
Step 2- Set the biscuits to a meals processor/blender and then whizz up till crumbly, but not too nice.
Measure 3- Melt the butter and coconut oil.
Measure 4- At a bowl, then add the crushed biscuits and pour the melted butter coconut oil and blend until like moist sand.
Set into the freezer whilst you make the filling.
Measure 1- Drain the cashew nuts and set them in a food processor/blender together with the coconut lotion, Biscoff distribute, vanilla, melted coconut oil.
Measure 2- Whizz upward on top for about 5 minutes until smooth.
Add a dash of water if necessary.
Measure 3- Pour the filling into the foundation, level using a spoon and then pop back in the freezer to set.
Permit the cheesecake to place completely.
This can take approximately 4-6 hours (I leave mine to place overnight).
I disperse a number of those Lotus Biscoff disperse throughout the surface of the cheesecake, and embellished it with a few vegan squirty cream celebrities, topped with grated dairy-free white chocolate along with a Lotus Biscoff biscuits.
You may even melt a few of those Biscoff disperse and spread it over for much more cookie cutter goodness!
