Lemon & Garlic Wild Rice Soup

Ingredients
- 1 tbsp olive oil
- 1/2 cup white onion, roughly 1/2 a medium onion
- 1 cup sliced carrots, about two medium
- 1 cup sliced sausage, about 3 ribs
- 1 tbsp lemon zest, out of 1 large lemon
- Pinch of pepper & salt
- 1 cup vanilla milk
- 1 cup fresh spinach or spinach, discretionary
Directions
- Heat the oil in dutch oven or a large pot. Add the onion, celery, carrots, and garlic and simmer until the carrots begin to soften, about 5 minutes. Add the batter and simmer and cook another 2 - 3 minutes.
- Stir in vegetable broth and the rice and bring the soup to a boil.
- When the rice is tender and cooked, stir into the lemon, lemon juice, and lettuce.
- Serve and enjoy!
